Celebrating Afternoon Tea Week with 'Scents of Summer' at The InterContinental London Park Lane

As part of our 'Scents of Summer' afternoon tea collaboration with the InterContinental London Park Lane we celebrated Afternoon Tea Week with an exclusive one day event that took guests on a sensory journey reminiscent of an English garden in summertime.

Guests were able to experience many of the fragrance notes that define Floris’s summer collection whilst sampling some wonderfully creative Afternoon Tea delicacies.

Around 80% of taste is derived from smell and, with the help of Executive Chef Ashley Wells and our own Bespoke Perfumer Nicola Pozzani, guests were treated to an extraordinary creative insight into the association between perfume blending and food design.

Before the first course arrived Nicola and Ashley spoke to guests individually about the collaboration between Floris and InterContinental London Park Lane and how Nicola’s perfumery talent and Ashley’s culinary expertise have created a quintessentially English dining experience.

Ashley’s food creations are visually engaging and their impact on both the eye and the palette is beautifully enhanced by Nicola’s use of scent.

As they enjoyed Ashley’s elegant scroll sandwiches and bouquet cakes, Nicola talked guests through the pure fragrance oils that had inspired the food design. Fragrance notes were provided to help explain the sensory connections.

Guests learnt how sparkling light rose oil had been the inspiration behind Ashley’s exquisite rose scented cucumber scroll sandwich and were able to detect nuances of the light citrus fragrances found in many of Floris’s favourite summer fragrances in the smoked salmon and bergamot infused cream cheese scroll. The pink peppercorn and chicken is suggestive of the softly spicy pink peppercorn note found in the delicately floral Cherry Blossom fragrance.

The second course features homemade scones with a side of earl grey butter and wild strawberry jam. The pure fragrance oil associated with this dish is bergamot, familiar to many as an ingredient in Earl Grey tea and very often used as a refreshing top note in fragrance construction.

The final course is the Summer Bouquet dessert, which is sprayed with edible floral fragrance spray. It features elegant floral fruity ingredients such as jasmine, rosewater, violet, peach, grapefruit and berries and is evocative of Floris’s Bouquet De La Reine. 


The hotel’s position, close to Green Park and Hyde Park, as well as Floris’s own historic home in Jermyn Street, makes it the perfect location for an event that focuses so strongly on the scents of British Summertime.

The Scents of Summer Afternoon Tea experience can be enjoyed at the InterContinental London Park Lane until 27th September 2015 Monday to Sunday from 1pm to 5pm. Bookings are essential and can be made on 020 7409 3131.
